  • 1 lb (450 g) ground beef or sausage
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 medium zucchini, diced
  • 1 medium yellow squash, diced
  • 1 cup carrots, sliced
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) diced tomatoes, drained
  • 1 cup uncooked pasta (elbow macaroni or penne) OR 1 cup cooked rice
  • 1 can (10.5 oz) cream of mushroom or cream of chicken soup
  • 1 cup shredded cheddar cheese
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • ½ tsp paprika
  • 2 tbsp olive oil

🍴 Instructions

  1. Cook pasta (if using): Boil until just al dente, drain, and set aside.
  2. Brown meat: In a large skillet, heat olive oil. Add ground beef/sausage, onion, and garlic. Cook until meat is browned and onions are soft. Drain excess fat.
  3. Add vegetables: Stir in zucchini, squash, and carrots. Cook for 5–7 minutes until slightly tender.
  4. Combine mixture: Add corn, tomatoes, cream of mushroom soup, cooked pasta (or rice), salt, pepper, and paprika. Stir until everything is well coated.
  5. Assemble casserole: Transfer mixture into a greased 9×13 baking dish. Sprinkle shredded cheddar cheese on top.
  6. Bake at 350°F (175°C) for 25–30 minutes, until bubbly and golden on top.
  7. Serve warm as a complete meal.

🥡 Storage Method

  • Refrigerator: Store leftovers in an airtight container in the fridge for up to 4 days.
  • Freezer: Freeze in portions in freezer-safe containers for up to 3 months. Thaw overnight in the fridge before reheating.
  • Reheating: Warm in the oven at 350°F (175°C) for 15–20 minutes, or heat individual servings in the microwave. Add a splash of broth or milk if the casserole looks dry.
