  • Sharp, bold cheese flavor

  • Perfect for entertaining or gifting
  • Easy to prepare ahead and freeze

Ingredients

Ad
  • 1 cup (225g) unsalted butter, softened
  • 2 cups (250g) all-purpose flour
  • 1 ½ cups (150g) sharp cheddar cheese, finely grated
  • 1–2 fresh jalapeños, finely minced (seeds removed for mild heat)
  • ½ teaspoon salt
  • ½ teaspoon garlic powder (optional but recommended)
  • 1 tablespoon chopped fresh chives (optional for extra flavor)

Instructions

1️⃣ Prepare the Dough

In a large bowl, cream the softened butter until smooth and fluffy. Mix in the grated cheddar cheese until well combined.

Add the minced jalapeños, salt, garlic powder, and chives. Stir gently.

Gradually add the flour and mix just until the dough comes together. Avoid overmixing — this keeps the shortbread tender.

2️⃣ Shape & Chill

Divide the dough in half and shape into logs about 2 inches (5 cm) in diameter. Wrap tightly in plastic wrap.

Refrigerate for at least 1 hour (or up to 24 hours). Chilling is essential for clean slices and proper texture.

3️⃣ Slice & Bake

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

Slice the chilled dough into ¼-inch rounds and place on the prepared baking sheet.

Bake for 15–18 minutes, or until edges are lightly golden.

Let cool completely on a wire rack — they firm up as they cool.

Pro Tips for Perfect Shortbread

✔ Use freshly grated cheese for best flavor and texture.

✔ If you like heat, leave some jalapeño seeds in.

✔ For a smoky variation, swap part of the cheddar for smoked gouda.

✔ Sprinkle flaky sea salt on top before baking for a gourmet finish.

Storage

  • Store in an airtight container at room temperature for up to 5 days.
  • Freeze unbaked dough logs for up to 2 months — slice and bake straight from frozen (add 2–3 minutes to baking time).

Serving Ideas

  • Pair with tomato soup
  • Add to a charcuterie board
  • Serve with creamy dips
  • Crumble over salads for a savory crunch

This recipe proves shortbread doesn’t have to be sweet to be unforgettable. The balance of rich butter, sharp cheese, and fresh jalapeño makes every bite irresistible.
