  • 2 large chicken breasts, finely chopped or ground (~2 cups)
  • 2 large eggs
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup mayonnaise or Greek yogurt
  • 2 garlic cloves, minced
  • 1/4 cup chopped green onions or chives
  • 1/3 cup flour or breadcrumbs
  • 1/2 tsp paprika
  • 1/4 tsp black pepper
  • 1/2 tsp salt
  • 1/4 tsp baking powder (optional for fluffier texture)
  • Oil for frying (vegetable or olive oil)

Instructions

  1. Prep the Chicken:
    Finely chop chicken breasts into small pieces (or use ground chicken for quicker prep).
  2. Mix the Batter:
    In a large bowl, combine chicken, eggs, cheese, mayo, garlic, green onions, flour (or breadcrumbs), paprika, salt, and pepper. Mix well until everything is fully incorporated.
  3. Heat the Pan:
    Heat 2–3 tablespoons of oil in a large skillet over medium heat.
  4. Form the Fritters:
    Scoop about 2 tablespoons of the mixture per fritter and gently press into a patty shape.
  5. Fry Until Golden:
    Place patties in the hot skillet and cook for 3–4 minutes per side, or until golden brown and cooked through. Avoid overcrowding the pan.
  6. Drain & Serve:
    Transfer fritters to a paper towel–lined plate to remove excess oil.
