🥄 Method of Preparation: Crockpot Cowboy Soup

  1. Brown the Meat:
    • In a skillet over medium heat, cook 1 lb ground beef until browned.
    • Drain excess fat and transfer the beef to the crockpot.
  2. Add Aromatics:
    • Stir in 1 chopped onion and 2 cloves minced garlic to the crockpot.
  3. Combine Vegetables and Beans:
    • Add:
      • 1 can (15 oz) diced tomatoes
      • 1 can (15 oz) diced tomatoes with green chilies
      • 1 can (15 oz) corn kernels, drained
      • 1 can (15 oz) pinto beans, drained and rinsed
      • 1 can (15 oz) black beans, drained and rinsed
      • 2 medium potatoes, diced
  4. Season the Soup:
    • Sprinkle in 1 tsp chili powder, 1 tsp smoked paprika, ½ tsp cumin, salt, and black pepper to taste.
    • Pour in 4 cups beef broth and stir well to combine all ingredients.
  5. Slow Cook:
    • Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until potatoes are tender and flavors are well combined.
