Ingredients

4 cups frozen hash browns, thawed

1 cup cooked breakfast sausage or bacon, crumbled

1 cup shredded cheddar cheese

1/2 cup diced bell peppers (any color)

1/2 cup diced onions

6 large eggs

1 cup milk

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

1/2 teaspoon paprika (optional)

Cooking spray or butter for greasing the baking dish

Preparation

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Baking Dish: Grease a 9×13-inch baking dish with cooking spray or butter to prevent sticking.

Layer the Hash Browns: Spread the thawed hash browns evenly in the greased baking dish to create a bottom layer.

Add Meat and Veggies: Sprinkle the cooked breakfast sausage or bacon crumbles, diced bell peppers, and diced onions over the hash browns.

Add Cheese: Sprinkle shredded cheddar cheese evenly over the other ingredients in the baking dish.

Prepare the Egg Mixture: In a mixing bowl, whisk together the eggs, milk, salt, black pepper, garlic powder, and paprika (if using) until well combined.

Pour Egg Mixture: Carefully pour the egg mixture over the layers in the baking dish, ensuring it’s distributed evenly.

Bake: Place the baking dish in the preheated oven and bake for about 35-45 minutes or until the casserole is set in the center and the top is golden brown.

Check for Doneness: To check if the casserole is done, insert a knife or toothpick into the center. If it comes out clean and the top is nicely browned, the casserole is ready.

Serve: Once done, remove the casserole from the oven and let it cool for a few minutes before cutting into slices and serving.

Garnish and Enjoy: You can garnish with chopped fresh herbs like parsley or chives if desired. Serve the hashbrown breakfast casserole with your favorite breakfast sides like fresh fruit, toast, or coffee.
