Homemade lemon powder is a wonderfully versatile ingredient made from dried lemons. It delivers bright citrus flavor without moisture, making it perfect for baking, cooking, seasoning, and even drinks. Simple to prepare and long-lasting, it’s a great way to use lemons to their fullest.

Lemon powder captures the fresh, tangy essence of lemons in a concentrated, shelf-stable form. Traditionally used in many home kitchens to avoid waste, it’s especially useful when fresh lemons aren’t available. Just a small pinch can instantly add aroma and acidity to both sweet and savory dishes.

  • Fresh lemons (as many as you like, preferably organic)

Instructions

1. Prepare the Lemons

  • Wash the lemons thoroughly.
  • Pat them dry.
  • Slice them very thinly (the thinner the slices, the faster they dry).
  • Remove visible seeds.

2. Dry the Lemons

You can use one of these methods:

Oven Method

  • Preheat oven to 90–100°C (195–210°F).
  • Arrange lemon slices on a baking tray lined with parchment paper.
  • Dry for 2–4 hours, turning slices occasionally, until completely dry and crisp.

Dehydrator Method

  • Place slices on dehydrator trays.
  • Dry at 55–60°C (130–140°F) for 6–8 hours, until brittle.

Air-Drying (Warm Climate)

  • Place slices on a clean mesh or tray.
  • Cover lightly with cloth and let dry in a warm, airy place for several days, turning daily.

3. Grind into Powder

  • Once fully dried and cooled, grind lemon slices (including peel) in a spice grinder or blender until fine.
  • Sift if needed for a smoother powder.

4. Store

  • Transfer lemon powder to an airtight glass jar.
  • Store in a cool, dry place away from light.
  • Keeps well for up to 6–12 months.

Uses for Lemon Powder

  • Add to cakes, cookies, and muffins
  • Sprinkle over fish, chicken, or vegetables
  • Mix into spice blends or marinades
  • Stir into tea, water, or smoothies
  • Use in salad dressings and sauces

Tips for Best Results

  • Use organic lemons since the peel is included
  • Ensure lemons are completely dry to prevent clumping or spoilage
  • Store with a small food-safe silica packet if humidity is high
