This classic comfort food is sure to satisfy your hunger! The flavorful meatloaf, creamy mashed potatoes, and gooey melted cheese combine to create a hearty and delicious dinner.


Ingredients

FOR THE MEATLOAF:

  • 2 pounds of ground beef (85% lean)
  • 1 cup of breadcrumbs
  • 1/2 cup of milk
  • 1 medium onion, chopped
  • 2 cloves of garlic, minced
  • 2 large eggs
  • 1 tablespoon of Worcestershire sauce
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of pepper
  • 1 teaspoon of dried thyme
  • 1/2 cup of ketchup
  • 2 tablespoons of brown sugar

FOR THE MASHED POTATOES:

  • 2 pounds of potatoes, peeled and chopped
  • 1/2 cup of milk
  • 1/4 cup of unsalted butter
  • Salt and pepper to taste

FOR THE TOPPING:

  • 1 1/2 cups of grated cheddar cheese
  • Fresh parsley, chopped (for garnish)

Directions

  1. Prepare the Meatloaf:
    • Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
    • In a large mixing bowl, combine the ground beef, breadcrumbs, milk, onion, garlic, eggs, Worcestershire sauce, salt, pepper, and thyme. Mix until well incorporated.
    • Transfer the mixture to the prepared loaf pan, shaping it into a loaf.
    • In a small bowl, mix the ketchup and brown sugar, then spread the mixture evenly over the top of the meatloaf.
    • Bake for 60-70 minutes, or until the internal temperature reaches 160°F (70°C). Let the meatloaf rest for 10 minutes before slicing.
  2. Prepare the Mashed Potatoes:
    • While the meatloaf is baking, boil the potatoes in salted water until tender, about 15-20 minutes.
    • Drain the potatoes and return them to the pot. Add the milk, butter, salt, and pepper, then mash until smooth and creamy. Set aside.
  3. Add the Topping:
    • Once the meatloaf is baked, sprinkle the grated cheddar cheese on top. Return it to the oven for 5-7 minutes, or until the cheese is melted and bubbly.
  4. Serve:
    • Slice the meatloaf and serve alongside the mashed potatoes. Garnish with fresh parsley for a pop of color and extra flavor. Enjoy!
