🧾 Ingredients (Makes 10–12 egg rolls)

  • 1 lb ribeye steak or sirloin, very thinly sliced
  • 1 tbsp olive oil or butter
  • 1 small onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 cup mushrooms, sliced (optional)
  • Salt & black pepper, to taste
  • 1 tsp garlic powder (optional)
  • 8–10 slices provolone cheese (or American cheese)
  • 10–12 egg roll wrappers
  • Oil, for frying

Optional Dipping Sauce

  • Cheese sauce
  • Garlic aioli
  • Ketchup + mayo mix

  1. Cook the filling
    Heat oil in a skillet over medium-high heat. Add onions, bell peppers, and mushrooms. Sauté until soft and lightly caramelized. Remove and set aside.
  2. Cook the steak
    In the same pan, add the sliced steak. Season with salt, pepper, and garlic powder. Cook quickly (2–3 minutes) until just done.
  3. Combine
    Return the vegetables to the pan and mix with the steak. Remove from heat and let cool slightly.
  4. Assemble egg rolls
    Place an egg roll wrapper on a flat surface. Add steak mixture in the center, top with provolone cheese. Fold in sides, roll tightly, and seal edges with a little water.
  5. Fry
    Heat oil to 350°F (175°C). Fry egg rolls in batches for 3–4 minutes, turning until golden and crispy. Drain on paper towels.
  6. Serve
    Slice in half if desired and serve hot with dipping sauce.
