Hearty Chicken Casserole

📝 Ingredients:

  • 2 lbs boneless, skinless chicken breasts or thighs, cut into chunks
  • 2 tbsp olive oil or butter
  • 1 large onion, diced
  • 2 garlic cloves, minced
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 2 medium potatoes, peeled and diced
  • 1 cup mushrooms, sliced (optional)
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp paprika
  • Salt & pepper to taste
  • 2 tbsp all-purpose flour
  • 2 cups chicken broth
  • 1 cup milk or cream
  • 1 cup shredded cheddar (optional for topping)
  • ½ cup breadcrumbs (optional for topping)
  • Fresh parsley, chopped (for garnish)

🍳 Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Sear chicken: In a large skillet, heat olive oil/butter. Add chicken chunks, season with salt & pepper, and cook until lightly browned. Remove and set aside.
  3. Cook veggies: In the same skillet, sauté onion, garlic, carrots, celery, and mushrooms until softened (5–6 minutes). Add potatoes.
  4. Make sauce: Stir in flour, cook 1 minute, then slowly whisk in chicken broth and milk. Add thyme, rosemary, paprika, and simmer until slightly thickened.
  5. Combine: Return chicken to the skillet, stir everything together, then transfer to a greased casserole dish.
  6. Top it: Sprinkle with cheese and breadcrumbs if using.
  7. Bake for 30–35 minutes, until bubbly and golden on top.
  8. Serve hot, garnished with parsley.

  • Swap potatoes for cooked rice or pasta for a different texture.
  • Add frozen peas or corn in the last 10 minutes for extra color and sweetness.
  • Great for meal prep—leftovers taste even better the next day.
