🍳 Instructions:
- Preheat oven to 375°F (190°C).
- Sear chicken: In a large skillet, heat olive oil/butter. Add chicken chunks, season with salt & pepper, and cook until lightly browned. Remove and set aside.
- Cook veggies: In the same skillet, sauté onion, garlic, carrots, celery, and mushrooms until softened (5–6 minutes). Add potatoes.
- Make sauce: Stir in flour, cook 1 minute, then slowly whisk in chicken broth and milk. Add thyme, rosemary, paprika, and simmer until slightly thickened.
- Combine: Return chicken to the skillet, stir everything together, then transfer to a greased casserole dish.
- Top it: Sprinkle with cheese and breadcrumbs if using.
- Bake for 30–35 minutes, until bubbly and golden on top.
- Serve hot, garnished with parsley.
