Introduction:

Walking tacos are a beloved fair and party food, typically made by filling a small bag of corn chips with taco meat and toppings. This casserole version transforms that grab-and-go snack into a hearty, oven-baked family meal. Layers of seasoned beef, beans, cheese, and crunchy chips come together in a dish that’s both comforting and fun. Perfect for busy weeknights or casual gatherings, this casserole delivers all the Tex-Mex flavors you crave in one easy-to-serve dish.

Ingredients:

  • 1 lb ground beef (or ground turkey)
  • 1 small onion, diced
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • 1 can (15 oz) black beans or pinto beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies (like Rotel)
  • 1 cup corn (canned or frozen, drained if canned)
  • 2 cups shredded cheddar cheese (or Mexican blend)
  • 3–4 cups corn chips (Fritos or Doritos work well)
  • Optional toppings: sour cream, shredded lettuce, diced tomatoes, jalapeños, green onions, salsa, guacamole

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, cook the ground beef and onion over medium heat until browned. Drain excess grease.
  3. Stir in taco seasoning, beans, tomatoes with chilies, and corn. Let simmer for 5 minutes.
  4. Spread half of the corn chips on the bottom of a greased 9×13-inch baking dish.
  5. Pour the beef mixture evenly over the chips.
  6. Sprinkle shredded cheese over the beef layer.
  7. Bake uncovered for 15–20 minutes, until cheese is melted and bubbly.
  8. Top with the remaining corn chips just before serving for crunch.
  9. Add your favorite toppings like sour cream, lettuce, salsa, or guacamole.

Storage & Reheating:

  • Store leftovers covered in the refrigerator for up to 3 days.
  • Reheat in the oven at 350°F (175°C) for 10–15 minutes, or in the microwave.
  • For best texture, add fresh chips when reheating since they soften in storage.
